Not only does the vibrant color exude sheer joy, the rich, nutritious ingredients deliver true radiance. Beets, carrots, and red cabbage combined with our ORGANIC INDIA Neem are a powerful team, transforming ‘low’ into ‘glow’ from the inside out.
Few plants are as cherished in Ayurveda as Neem, also known as Indian Lilac. Technically a tree, all parts of this valued plant have health benefits, from the berries and seeds to the leaves, flowers, roots, and bark. For centuries, Neem has been used to support immunity, bacterial balance, and healthy inflammatory response. It is particularly renowned for its role in promoting healthy nails and skin.
This simple shredded salad makes the most of Neem’s benefits by packing in other notable plants with skin-protective properties. Packed with antioxidants and minerals, beloved beetroot is also associated with supporting natural detoxification processes; carrots are brimming with beta-carotene, which naturally helps protect against sun damage; and, like carrots, red cabbage are rich in Vitamin A, helping to maintain skin elasticity.
In this salad, Neem’s bitter taste is balanced with beets’ natural sweetness and a little maple syrup. It does have a sharpness that can be striking, however, so feel free to start with just a ½ Teaspoon of Neem in the dressing and see how it suits you before adding more or adjust the maple syrup or alternative sweetener to taste.
Glow Beet Salad with Neem Dressing

Serves 4
INGREDIENTS:
For the dressing:
- ¼ Cup avocado oil
- ¼ Cup red wine vinegar
- 2 Tablespoons pure maple syrup
- 1 Tablespoon Dijon mustard
- ½ to 1 Teaspoon ORGANIC INDIA Neem powder
- Sea salt and black pepper to taste
For the salad:
- ¼ medium to large red cabbage (about 2 cups shredded)
- 2 red beets, peeled
- 1 large carrot, peeled
- ⅓ Cup raisins
- ⅓ Cup sliced almonds
- Chopped parsley, optional, for garnish
METHOD:
- Prepare the dressing: Combine all ingredients in a small jar and shake to combine. Set aside.
- Use a food processor to finely shred the cabbage, placing it in a medium to large mixing bowl. Repeat with the beets, then with the carrots, and add to the bowl.
- Add the raisins and almonds (optionally, reserve some for topping). Pour over all the dressing and toss/stir to combine. Garnish with chopped herbs.
- Serve immediately or allow the dressing to soak in 30 minutes.
NOTE: To make ahead: keep the shredded beets separate from the other ingredients and add in to serve.
